Baked Grits are the best!

Baked grits is one of my favorite brunch dishes. I didn't notice until I took these photos, how much it looks like cornbread. I guess that makes sense, given the ingredients, but it's so much more! It's cheesy, garlicy, buttery heaven. I also love that if you let it cool completely you can cut it into squares, which makes it easy to serve and also good for traveling (should you need to take it with you to a party). It's also great with a little bit of bacon jam!

I serve both the grits and the bacon jam a little warm.
Here is the recipe (adapted from Paula Deen):
1 cup grits
1 stick butter
3 eggs, scrambled
1 8oz package of shredded cheese
2 cloves of garlic
1/3 cup of milk
salt and pepper

1 cup of grits (quick grits or stonemilled both work). Prepare according to directions...which usually means one cup of grits cooked in 4 cups of water with some salt to taste.

Cook the grits until they're creamy. Add one stick of butter and the garlic. 3 eggs (temper the eggs with some of the hot grits before you add them in, or you'll end up with scrambled egg grits). One 8oz bag of shredded cheese (I usually do the cheddar and monterey mix). 1/3 cup of milk. Add salt and pepper to taste. Once it's all blended together, bake in a lined or greased pan for 45 minutes at 375 until the top begins to brown.

Cool completely if you want to cut into squares. Enjoy!
